Biryani Masala ,Sauces
3-4 Large Portions
A Traditional Asian dish, layers of soft Basmati rice and meat, chicken or vegetables in an aromatic, spicy sauce.
1. Heat 3-4 tablespoons of oil in a large pan, for 30 seconds on full heat.
2. Add 175g Shaheens Biryani Masala and stir continuously for 1 minute
3.Add 300g of Meat, Chicken or Vegetables. Add 4-5 tblsp of plain yoghurt, mix together well. For hot Biryani add 5 whole green chillies
4.Cover and simmer on medium heat for about 15 minutes, stirring occasionally, until tender. (for lamb or beef add 200ml of water at step 3 and cook for about 45 minutes)
5. Meanwhile, wash 300g Basmati Rice and soak for 15 mins, then place in a large pan with 2 litres of salted water (tip: 2 tsp of oil will help separate the rice) Stir, then boil uncovered for about 10 mins, until rice is three quarters done. Remove from heat and drain off excess water .
6. Spread all of the rice over the top of your cooked Biryani in the other pan.(you can top the rice with fried onions if desired)
7. Cover the pan and place back onto the oven top on low heat for about 15 minutes, this will allow the steam to finish cooking the rice and meat thoroughly until tender.
Tasty Tip: add chopped coriander and 1 sliced tomato at step 3.
Serving suggestion: serve with salad and yoghurt chutney.
INGREDIENTS: onions, vegetable oil, tomatoes, garlic, ginger, caraway, mace, mixed herbs and spices, Kewara, lemon juice, salt.
